Hey y’all come on in my kitchen I’m fixing something a little bit different tonight different maybe from what you have ever cooked but certainly what I have not ever fixed before but my daughter-in-law’s been making them and y’all they’re so good it’s called chicken meatballs okay have y’all ever made them well if you haven’t.

Come on in here with me and we’re going to make some okay all right and these glasses have a terrible glare so sorry about that all right so I’m going to start off I’m going to sauté some of my vegetables I’m going to put some onion and some bell pepper and let’s see what else do we some celery I’m going to put in a little bit of olive oil and I’ve.

Already got my Skillet hot I’m just going to sauté it down just a little bit just so there’s not that extra crunch in the meatball because it needs to be soft and then I’m going to show you what else I’m going to put in it okay so we’re just going to chop us up some onion do y’all love to cook I love to cook love to cook I teach during the day.

That’s my day job and then I teach y’all to cook that’s my evening job and my Saturday job but y’all I love both it’s Friday while I’m recording this and we had a good day at school we have what’s called Rush on Fridays I work at a Christian school a private school and we have what’s called are you serving him it’s like a CH Apple service.

And y’all it was fantastic our pastor came in and spoke to us and it was Inc an incredible service incredible service but um so that’s how my day was and it’s rainy and it’s cold outside what’s it like where y’all are at ah I’m kind of getting ready for spring are y’all I either want more snow or spring that’s I I don’t ask for much do I all right so.

We’re g to I’m GNA quit talking so much much and I’m going to get the cutting okay so I’ve got two lounds of ground chicken so I’m doing a whole onion and another reason why I wanted to I think some just put the Flor y’all another reason why I wanted to sauté it down is because I didn’t want to have to cut it so.

Small um it’s just easier just to chop it up so that’s what I’m doing okay all right so this was a pre-washed bag of celery I used it last night so I’m just going to slice through here and then we’ll chop back through it a little bit more still can you see what I’m doing I think I got you in the camera I’m going to say about a Cup’s.

Worth okay and I’m going to turn turn your knife on the side and just chop back through it don’t be afraid y’all I’m having a drawing tomorrow um yesterday I did a live was it yesterday I think so yesterday or day before and I said that if you.

Away the Olivewood um what am I trying to say Pioneer Woman spatulas I have given away Kitchen Aid peelers um I have given away seasonings y’all go get you some we have them now in um a few grocery stores here in town I’ve heard that they’re at Kroger my.

Everglade seasoning and it is at Publix I keep W to say Target Publix get on Amazon and order you some of this garlic wine seasoning y’all it’s fantastic okay so I’ve chopped up my celery and now I’m just going to cut me up some green bell pepper it’s what I had on hand if you have red or orange or yellow.

Don’t y’all like those color bell peppers they’re so fun okay I need a shreded knife did I say that right serrated serated I don’t know I have a language of my own do y’all now keep in mind I’m going to cook these down a little bit in a little bit of olive oil I’m.

Going to I’m going to sauté them I need them to break down where they’ll be smaller smaller than what I’m cutting them all right y’all I’m going to put these all in my pan that’s right behind me that’s all ready so watch me I just added some of that glass bottle One Source cold press olive oil.

Don’t forget that’s what you need to look for that’s your healthiest oil now to help it break down a little bit I’m going to put some of this Everglades on it because it’s got a salt in it as well oh y’all do you love the uh flavor I’m having problems with my words do you love the smell the fragrance of the trio that celery onions bell pepper.

Oh my goodness y’all it’s going to permeate this kitchen it’s going to starve me half to death before it’s even ready going get my Big Bowl here and we’re going to go in with that ground chicken I got me two pounds from Aldi’s do y’all have Aldi in your neighborhood.

In your town if you don’t y’all don’t know what you’re missing we have all these and it’s amazing I’m going to drain some of this juice off and I’m going to throw this ground chicken in there all right y’all we got two lbs of ground.

Chicken we’re going to take it and we’re going to throw in a little bit of feta crumbles do y’all like Feta you want to know a secret I I don’t but I like it in my in the ground chicken meatballs that Gabby makes so I’m going to make them with it I’m going to get it as finely CR uh crumbled up as.

Possible I don’t like the big chunks of feta oh y’all it’s going to be so good okay oh the big old pieces y’all I got to break them up okay all right let me rinse my hands grab me a towel look at my nice little dish Rags I.

Can use them as a towel too we get them from the Amish Market they’re so nice and Amber’s market downtown marville sells them as well so y’all check that out okay all right we’re going to throw in two eggs we need something to bind up the stuff so we’re going to throw in two.

Eggs keep in mind I have that Trio sauté back here behind me I turned it up just a little bit I think it needs to be turned up we’re going to throw in some sundried tomatoes and they’re already kind of Julian it says the Julian uh cut but I’m going to go ahead I think and cut them.

Up just a little bit more let me move that out of the way just a little bit we’re going to pull over here another I’m just going to kind of chop these Julian am I saying that right probably not I got my own language y’all I’m telling you the oil in all I don’t pour the oil.

Out but the tomatoes are oily they’re sundried tomatoes and I’m just kind of squishing them up a little bit okay we going throw that in there and we’re going to throw in some breadcrumbs I have some glutenfree breadcrumbs that’s what I had on hand so I’m going to use.

It for all of you who are gluten intolerant go get you some gluten-free breadcrumbs and keep it on hand and I’m just going to kind of we’re going to say about probably about a half a cup we’re going to throw in some of that garlic wine seasoning from Melting.

Pot we’re going to go in with the everglaze and I’m going to get some Italian seasoning throw in there too y’all if you’ve got fresh herbs throw you in some fresh parsley some freshh thyme some Rosemary let me get some of that not the fresh mine’s not the fresh but get you some fresh okay I have some powdered Rosemary.

Ground Rosemary and I’m going to just kind of take me about about a teaspoon and throw that in there and then I have just some Italian season good old Great Value brand we’re just going to throw that in there make sure I have everything okay I’m gonna get me some gloves y’all look.

At these gloves these rubber gloves oh my goodness these are are my husband’s grilling gloves and it’s all I had I was out of mine whoops but I do like cuz they have like the texture inside of them it’ll be easy to hold on to those meatballs but my goodness y’all my hands are going to be able to be seen for.

Miles okay here we go we’re going in y’all mixing that egg I think we’re going to have to have some more bread crumbs oh y’all do y’all see it oh it looks so good sundried tomatoes better cheese lots of seasonings two eggs we’re fixing to.

Throw in that that um celery and onion and bell pepper that’s what’s coming in next okay y’all so my vegetables are done I’ve added a little more uh breadcrumbs and I decided to put just a little more of the sundried tomatoes okay so we’re going to put these sauteed uh this sauteed Trio of celery onion and bell pepper.

And now we’re going to mix it up oh y’all my sleeves coming down goodness gracious I get handicapped sometime here in the kitchen with my messy hands all right y’all that extra probably about another half cup so do a whole cup to two pounds a half a cup to every half a cup of breadcrumbs to every.

Pound of ground chicken look at that y’all all right so what I’ve got over here well I can grab it with my I’ve got my stone wear and going make me a little spot here I need a kitchen about double the size I have y’all all right and I’m just going to make little balls.

About the size of a golf ball maybe y’all think that’s big enough I think it is y’all you can see that feta see that feta in there oh y’all this is going to be so good I can’t I can’t wait for y’all to see it okay y’all I want y’all to see it how many that two pounds of ground chicken made y’all look.

At this look at this would you it made 12 and eight more is 20 5 30 36 chicken meatballs y’all talk about some meal prepping all right I’m going to pop it in the oven my oven’s on 400 I’ll let you know how long that it cooks.
