Wag Guan welcome back to cooking gluten- and dairyfree with Dave D we have a special recipe for you today ladies and gentlemen jerk tacos with pineapple salsa I haven’t mentioned this yet in the channel but both my parents are from the West Indies my mom is from Antiga and my dad is from Jamaica so Caribbean food is one of my favorites I try my.

Best to master the food I grew up on and I think I’ve gotten pretty close with my jerk chicken recipe to get that authentic jerk flavor though we have to take this outside to the charcoal grill then we have to pair it with some pineapple salsa for a blend of savory and sweet we then throw it on some tacos for jerk tacos this is one of my.

Favorite recipes on the channel and I’m excited to share it with you let’s get down to business so starting with the chicken we’ll be using some skinless boneless chicken thighs I know it’s controversial but I clean my meat before I cook so I’m going to be adding some vinegar mixing the thighs in the vinegar and then rinsing it a few times with.

Find it it is on Amazon let’s go ahead and add this and then rub it into all the meat when we’re done it should look a little something like this all right so this is crucial we need this to marinate for as much time as we can our goal is overnight but we don’t want to do any less than 2 hours so let’s plan this out we want this to be as flavorful.

Going to add a little bit of sea salt now get a spoon and mix it all together so fresh and so flavorful like this could really have been on video on its own anyway now that our salsa is done let’s go outside to the grill all right so if you look at the grill closely you’ll notice that I have one side with all the white hot coals and the other.

Side with no coals we’ll use the hot side the left side in this video to sear the meat and then we’ll use the colder side so the meat can essentially smoke so go ahead and add your chicken to the hot side let them cook for about 2 minutes or so or until they get some nice color when they have some nice color go ahead and flip them and then do.

The same on the other side now remember we added brown sugar and Browning and those things burn so you might get some darker spots but trust me this is part of the process so during this process make sure to keep a close ey on the grill some areas will be hter than the others so don’t be afraid to move the chicken that’s cooking too fast to a.

Cooler spot and vice versa when the chicken looks like this on both sides move it to the cooler side now we’re going to essentially create an oven that is using charcoal as it heat and this is what helps give jerk chicken its signature flavor so go ahead and close the top and let it bake or smoke now the source of the heat is coming from the.

Bottom so be sure to flip the chicken every 3 to 5 minutes or so now after about 15 minutes we want to start checking the temperature we want that internal temperature to get to 175 I’m not saying the chicken’s going to be done in 15 minutes there are too many variables for me to predict how long it’ll take all I’m saying is check the.

Chicken so you can get an idea of how long it’s going to take to bake or smoke let it keep going until it gets to 175 this can take as little as 25 minutes or as much an as an hour depending on variables be patient it’s worth it now when your chicken gets to 175 take take it off the grill and let it rest for about 10 minutes before cutting into it.

Come on now look how moist this chicken is it’s also very tender look how easy the knife is cutting through it trust me if you do everything I said here you can’t go wrong anyway cut the chicken up into bized pieces and put them in a bowl it should look a little something like this now it’s time to build our tacos grab some gluten-free taco shells and.
