If you have amaranth seeds and are unsure how to use them, a delightful and simple recipe for amaranth cookies awaits. These cookies require only four ingredients: 1 cup of cooked amaranth seeds (also known as kiwicha), or 1 cup of corn flour, 3 ½ tablespoons of muscovado sugar, and ½ teaspoon of ground cinnamon. This recipe is gluten-free and can be prepared using an oven, stovetop, or air fryer, making it accessible for various cooking preferences.

Amaranth is not only versatile but also nutrient-rich, containing essential amino acids such as lysine and methionine, which are often limited in cereals and legumes. When combined with corn, amaranth provides a complete protein profile, making it an excellent choice for those seeking nutritious alternatives. This combination highlights the complementary nature of these two foods, offering a wholesome option for health-conscious individuals.

Hello, how are you, welcome to Cocina & Vida Saludable, my name is Paola. On this occasion we will share with you the recipe for some cookies based on amaranth seeds. We know that this presentation is not very common in Mexico, but it is in other regions, and we hope you like it. They are also very easy to make and can be made in the oven, on the stove or in an air fryer. If you like this recipe, I invite you to subscribe and activate the notification bell so you can keep an eye on the videos we upload every week. Well, let’s start with the recipe.

We will use a cup of cooked amaranth seeds, in the upper right part of this video we leave you the link on how to prepare it, a cup of corn flour, sweetener to taste, I am going to use three and a half tablespoons of muscovado sugar and optional half a teaspoon of cinnamon powder. We will start by placing the corn flour, sugar and cinnamon powder in a deep container. We mix. Corn is a good source of vitamin B1, it contains plenty of potassium, phosphorus, magnesium and iron. We add the cooked amaranth.

We integrate. At this point I recommend you continue kneading with your hands. When we obtain a sandy consistency, we will add a little liquid. I am using half a cup of water. We mix. Amaranth is rich in protein and polyphenolic compounds such as flavonoids, carotenoids and tocopherols that are beneficial for our health. And this is the consistency of the dough that we will obtain, compact and easily detached from the container where we prepare it.

We will form balls with our wet hands, I am making spheres between 2 to 3 cm in diameter. Compared to other cereals, amaranth contains a greater amount of phosphorus, calcium and iron. With this amount of ingredients I obtained 31 balls. We will now form the cookies, I will use a tortilla press, if you do not have one, in the upper right part of this video we leave you other alternatives that you can use. These cookies can be made in the oven, on the stove, and in the air fryer. If you choose to make them in the oven. We preheat it to 170 degrees Celsius, and place the cookies on a greased tray.

We will bake them for 25 minutes or until they look golden brown. Once the cookies are ready, we wait for them to cool before trying them. If you choose to make them on the stove. We will use a preferably non-stick frying pan and preheat it over medium-low heat. We place the cookies and let them cook for approximately 15 minutes. After the cooking time has passed, we turn them over and let the cookies cook for approximately the same time on that other side. Both amaranth and corn are naturally gluten-free,.

Making them a great option for those with gluten sensitivity. After the time has passed, we remove them and wait for them to cool before enjoying them. If you prefer, use an air fryer. We will preheat the device to 160 degrees Celsius for 3 minutes. We place the cookies and bake them at 160 degrees Celsius for 16 minutes. Amaranth and corn are considered complementary foods, because when combined they provide us with a complete protein profile. Once the cooking time has elapsed,.

We remove the cookies and wait for them to cool a little and we can try them. And by following these simple steps we would have ready some delicious crunchy and very nutritious vegan cookies, gluten-free and with very few ingredients.
