Hello everyone welcome back to my kitchen for another vegan and gluten-free recipe today I’m making an old favorite of mine I actually haven’t made this in probably four to 5 years but it’s delightful it’s kind of more of a side dish but still really tasty it’s this batch of cheesy stuffed mushrooms these are a favorite of mine at.
Thanksgiving they’re a perfect side dish for anyone at your Feast alongside whatever your main course is there is eight lovely ingredients going into these cheesy stuffed mushrooms so let’s go through each of them one by one super quickly first up we have two cartons of mushrooms they’re baby Bellas I’ve taken the stems out of them and I also rinsed.
Them off and patted them dry with a paper towel there’s also 1/2 cup of chopped shredded vegan cheese five chopped cloves of garlic 2 tbspoon of chopped flat leaf parsley 1/3 of a cup of gluten-free breadcrumbs about 2 tbspoon of extra virgin olive oil 1/4 TP spoon of salt and finally a few twists of ground black pepper to taste you know.
The drill now it’s time to go through the six steps of this recipe I’ve linked it down below in the description box in case you’d like to follow along with me and make some of these cheesy mushrooms yourself for step number one I’ll take about 1 tbspoon of the olive oil and use it to rub the outsides of the mushrooms and I’ll put the mushrooms onto a lined.
Baking sheet which I have all ready to go on my stove top for step number two I’ll make the filling to put inside of the mushrooms and that’s going to be all the rest of the ingredients so I’ll be mixing together the vegan cheese the chopped parsely the chopped cloves of garlic the breadcrumbs the salt about 1 tbspoon of olive oil and some ground.
Black pepper once the cheesy breadcrumb filling is all ready to go I’m going to move on to step number three which is to take two teaspoons per mushroom cap and fill up the mushrooms then I’ll move on to step number four which is to take the baking sheet with the stuffed mushroom caps and put it into my oven I’ll bake the mushroom caps in my oven for about.
20 minutes at 400Β° F until the mushrooms are bubbling the cheese is melted and the breadcrumbs are looking a bit toasted and browned for step number five I’ll remove the baking sheet with the stuffed mushroom caps from my oven set it on top of my stove and let them cool off for about 15 minutes and then for step number six which is the very last.
Step I’ll dish up the stuffed mushrooms right here at my countertop dig in and let you know what I think so with that let’s get started making these cheesy stuffed mushrooms I’ll begin by greasing up the mushroom caps using the lovely extra virgin olive oil if I could describe how these stuffed.
Mushrooms smell coming right out of the oven it smells like cheesy pizza with lots of garlic the vegan cheese milk melted quite a bit and the breadcrumbs got a nice Brown on them so let me just give you a closeup so you can see for yourself I also love the pop of color from the chopped parsley just overall the texture the variety of textures.
Going on with these mushrooms I don’t know why I grabbed one of the smallest ones what am I doing that’s ridiculous I’m grabbing this monster in the back it’s like this cute little cup SL container that you can also eat just stuffed with savor goodness here we go cheers through the camera I rarely eat anything with.
Breadcrumbs these days I just I don’t know I don’t really make recipes that call for them and they’re so dang good in these stuffed mushrooms honestly I would say most people are pretty accustomed to seeing stuffed mushrooms they’ve probably seen them at some restaurant in their lives and if you serve these to them not saying you need.
To sneak people vegan food I’m just saying this to show that they’re very convincing I think that people would believe that these are cheddar cheese stuffed mushrooms with like parmesan these aren’t lacking at all in richness in flavor texture I think they stand up so well to real Dairy cheesy mushrooms let me know what you thought of this.
Recipe down in the comments section it’s always a pleasure to hear from you and I want to hear your honest take good or bad let me know what you think if you like this recipe I have two in mine for you and I’ve linked them at the end of this video one of them is cheesy poutine for those of you who don’t know what poutin is I mean I didn’t know what it.
Was until maybe 2 to 3 years ago and I was watching something on Netflix it contains three components which are french fries beef gravy I think it’s beef it’s some kind of meat gravy maybe poultry and cheese curds and of course the episode that I’ve linked for you at the end of this video is a vegan take on poutine so you’ll be making cheese curds.
From some plant-based sources as well as the gravy which does contain mushrooms and the second recipe that I’ve linked for you at the end of this video is a vegan and gluten-free Easter kiche the main component is tofu but there’s also Fresh Garden veggies like sundried tomatoes there’s garlic there’s herbs it’s seriously so good and it does mimic.
Traditional cheese as you would have in these stuffed mushrooms as well definitely go and check those out I think you’ll enjoy them but for now take care everybody eat well and I will see you in the next episode on this channel bye
