Gourmet Green Goodness: A Day in the Life of a Plant-Based Foodie

hi and welcome to this what I eat a day video with some new gluten-free vegan inspiration I hope you are doing very well and that you are enjoying summer so over to the breakfast I had that day which was this chocolate oat bowl again I really can’t stop eating this and I’m really craving something.

With cacao almost every morning so therefore this chocolate oat bow is perfect I just mix gluten-free rolled oats cacao powder and this time I also added some cinnamon and cardamom some salt chia seeds and then also some almond milk and a chopped date then I just let it rest in the fridge for a while before.

Serving I serve this chocolate bowl with mangoes and big surprise pomegranate my favorite together with some homemade gluten-free granola and cashews on the top I also had a bucket cracker with avocado and cucumber and some Robos tea then I decided to go out for a short run.

I actually run really slow and quite short distance I don’t want to overwhelm myself with running really fast and long distance and for me the propose the running is just to feel good move my body and shake off the stress I really enjoyed this little round with clear blue sky and the.

Sun so now I have just made myself a cup of tea and I will do some uh studying and some work and I will see you at lunch then it was time for lunch and I was really warm that day so I wanted to make something easy so I decided to make some tofu avocado mesh with veggies I crumbled a piece of firm tofu on a plate.

And added some avocado lemon juice salt nutritional yeast black pepper soy yogurt and mashed it all together then I shoed some fresh basil and added it into the mesh and I also added some garlic powder and onion powder I then sliced some cucumber and some.

Tomato I really love bread and this gluten-free bread roll came directly from the oven so it was really crispy and warm I added a tofu avocado mesh on the top together with the veggies it was so good.

I then also had some fruits and cashews in the afternoon I had this delicious salty snack gluten-free homemade toast with sundried tomatoes and avocado for dinner I made baked beetroots potatoes and lentils served with a cashew basil.

Sauce I peeled and chopped some potatoes and added them on a baking tray with parchment paper then I chopped some peeled beetroot and also some spring onion I rinsed the green lentils and added them on the baking.

Tray I then added some salt and pepper on all the veggies and on the lentils some extra garlic powder onion powder nutritional yeast and olive oil to make them a bit crispy I bake this in 220 cΒ° for about 25 to 30 minutes until soft then I made this quick cashew basil sauce I added.

Some cashew into a blender together with water nutritional yeast black pepper salt garlic powder and also some chili flakes and of course I also added some fresh basil and lemon juice so let’s blend this one up I love to add different kind of veggies to every meal so I also shoed.

Some carrot sticks and green cake to when the oven baked veggies were ready it was time to eat so I added the potatoes beetroots onion lentils veggies and a cashew basil sauce on a plate together with some extra fresh basil on the top.
